Garden Season is among us! Tomatoes are starting t Garden Season is among us! Tomatoes are starting to turn, sweet corn is ready to harvest and we are so excited! For years our family has a had a big garden that we not only enjoy for the summer, but that we preserve for the whole year! It is such a treat to be able to have fresh tasting sweet corn in the middle of December, or delicious marinara for Stromboli.

Delicious Whipped Feta Dip and Roasted Strawberries

As you may know, I teach classes at our bakery including the Ins and Outs of Charcuterie and Butter board Basics. One of the main show stoppers of these classes is the Whipped Feta Dip with Roasted Strawberries. In the past I have experimented with different feta dips and have found them to be delicious, but an acquired taste. I have found that with this recipe and set of directions you end up with a more spread-like consistency that seems to please everyone. This deliciously fresh feta recipe is perfect in the summer when fresh strawberries and fresh basil are in season, or in the dead of winter at a holiday party. 

Why I started making Whipped Feta dip and Roasted Strawberries

As I mentioned, I am a big butter board enthusiast. I am always looking up new flavor combinations for my boards; smoked salmon and cream cheese, fresh blackberry butter, lemon curd cream cheese, cinnamon honey, etc… It was when I was scrolling Pinterest that I started seeing some whipped feta recipes. They were all served in a large bowl alongside a pile of naan. It looked so delicious that I had to try to make it as a butter board. So, I looked through several recipes and curated one that I felt could hold up on a board. Then I made sure to refrigerate it for at least an hour before putting it on a board. I waited until the last minute to assemble the board and it turned out beautiful. It happened to be the most popular dish of the class and I got so many requests for my recipe, so here we are.

How to Whip the Feta

This easy appetizer is really not what I consider whipped. Instead of getting out your mixer, instead grab your food processor. You add your chunk of feta, sour cream or Greek yogurt, olive oil, honey and sprinkle of black pepper into the food processor and mix until completely smooth. Sometimes it feels like it won’t get there but give it time. Give it a little taste test, making sure that although it has those tangy flavors it also has a smooth subtle sweetness to it. Keep in mind we will be drizzling honey overtop of it later along with the strawberries, so you do want to be able to taste the tangy feta cheese. If you don’t have a food processor then feel free to use an immersion blender.

How to Roast the Strawberries

This is truly too easy to be so life changing. Start by cutting your strawberries up. I always cut the tops off and then cut slices of strawberry. I then line a baking sheet with parchment paper. After that I drizzle my balsamic vinegar and honey over top of the strawberries and use my hands to mix it around. Make sure to then spread your strawberries in an even layer on the pan. Then pop the balsamic strawberries in the oven for 12-15 minutes. When they are properly roasted, they will fill the room with their sweet fragrance and be golden brown. Your balsamic-roasted strawberries should be served room temperature so make sure to let them cool for at least 30 minutes.

Assembling your Whipped Feta Dip and Roasted Strawberry Board

This should be assembled right before you plan on eating it. You want the consistency to stay as solid as possible. When you are ready, get your board or shallow bowl out. Simply dollop the whipped feta onto your dish and use a knife or spoon to spread it into your desired shape (I have included example below). Now add your balsamic roasted strawberries on top of the whipped feta. On top of that I like to add a large amount of fresh basil and then drizzle on more honey. You also can drizzle on more olive oil or a balsamic glaze. However, the more liquid you add to your feta the runnier it will make your dip.

This delicious appetizer, light lunch or snack is best served with crusty bread. My favorite way to serve it is on our Weekly Sourdough bread, but I also love to serve it with some garlic roasted naan bread or pita.

How to Make Whipped Feta Dip and Roasted Strawberries Ahead

You can make the whipped feta up to 3 days in advance and store in an airtight container in the fridge. This feta dip is a great recipe to do ahead because the consistency is more stable as it sits in the fridge. It is when it begins to warm up that it losses a lot of its structure. However, I don’t recommend doing the strawberries in advance.

Whipped Feta with Roasted Strawberries

This deliciously fresh feta recipe is perfect in the summer when fresh strawberries and fresh basil are in season, or in the dead of winter at a holiday party.

Ingredients
  

  • 8 oz of Feta crumbled or in a block
  • 1/3 c sour cream or plain Greek yogurt
  • 2 Tb olive oil
  • 1 Tb honeypinch of black pepper
  • for the Strawberries
  • 1 lb strawberries
  • 2 Tb Balasmic Vinegar
  • 2 Tb honey

Instructions
 

  • Preheat your oven to 350 degrees F.
  • Add the feta, sour cream, olive oil, honey and pepper to the food processor.
  • Mix until completely smooth.
  • Refrigerate for at least one hour.
  • While feta is in the fridge, roast your strawberries.
  • Cut them and then space them evenly on a baking sheet with parchment paper.
  • Drizzle your balsamic vinegar and honey on your strawberries.
  • Bake for 12-15 minutes. Let them get to room temperature before topping the feta.
  • Once whipped feta is chilled, spread it onto a board or shallow bowl. Top with the roasted strawberries and fresh basil. Then drizzle with honey. Enjoy!
