It’s not Thanksgiving yet but I’ve already eaten pumpkin pie on at least 4 occasions. I never tire of it, but sometimes I like to take that classic flavor up a notch by adding something like maple syrup. The beauty of the pumpkin pie is that you can add this or that, substitute this for that, and it always seems to turn out wonderfully. Whether you’re using cream instead of evaporated milk, or brown sugar instead of white, the ways you can make this pie are unlimited.
After making pumpkin pie many times, this Maple Pumpkin Pie recipe is my favorite because its flavor is so smooth and buttery, but sweet and spicy as well. Not too spicy, but enough to really balance the sweetness. With a dollop of whipped cream and a good cup of coffee, what could be better?
Maple Pumpkin Pie
Ingredients
- One 9-inch unbaked pie shell
- 2 large eggs
- 1 15 oz can pure pumpkin
- 1/4 cup pure maple syrup
- 3/4 cup sugar
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1/2 teaspoon ginger
- 1/8 teaspoon ground cloves
- 6 oz evaporated milk
- 6 oz heavy cream
Directions
- Prepare one unbaked 9-inch pie shell, place in refrigerator until ready to use.
- Preheat oven to 425 degrees,
- To a large mixing bowl, add eggs and beat lightly.
- To the eggs, stir in the pumpkin puree, sugar, maple syrup, salt, and spices.
- Gradually, stir in the evaporated milk and cream.
- Pour filling into pie shell and bake at 425 degrees for 20 minutes, then reduce temperature to 350 degrees and continue to bake another 40 to 50 minutes. You’ll know it’s done when there’s very little jiggle at the center of the pie. If you’re not opposed to making a small hole in the middle of the pie (I cover mine with a maple leaf cut out) you can use a Thermapen to test the internal temperature. It should be at least 180 degrees when fully baked.
- If you have decorative leaves or pumpkins, simply arrange them (already baked of course) decoratively on top of the warm pie filling.
