I have always loved the taste of brie, although it has been described as an acquired taste. However, something magical happens when brie hits the heat of the oven. It begins to bubble, the flavor becomes so buttery, and suddenly it can please all palates. So, here’s a quick introduction on how to bake brie with this simple Baked Brie recipe. I have also included my two favorite baked brie recipes.
How to Prep your Brie for Baking
Remove the rind
If you have ever seen brie you know that it is encased in a rind. The rind is edible and can be left on. In fact, the flavor from the rind is a wonderful way to add to the flavor of your bite of brie. In addition to being edible, when baking brie, the rind will act as almost a bowl like structure. You will NOT remove the whole rind, just the top. This is so that as the brie becomes gooey, the rind holds the melted cheese in. When it emerges from the oven it will be simple to dip into with a crostini or fresh strawberry.
The rind will not just peel off. In fact, you will have to chip away at it. The simplest way I have found it to use a spreading charcuterie knife and slowly cut off the top of the brie wheel. Make sure to leave a small rim around the edge to keep the cheese from spilling over when baked.
PIck your pan
Although they make very handy special baked brie pans you can really use whatever is convenient. I have used a cast iron skillet, a sheet pan, or even a Dutch oven. Whatever pan you use, just make sure to butter it or spray it with baking spray to keep your rind from sticking to the pan.
Bake till bubbly
You will know the cheese is perfectly cooked when it starts to foam on top. The bubbles indicate that the cheese is plenty soft and perfectly melty.
Sweet or Savory Baked Brie Recipe
Another amazing part about baked brie is that it tastes amazing with both savory compliments and sweet. A simple addition of honey brings the melted cheese to life; make it Hot Honey to add even more excitement. I will include my two favorite ways to serve baked brie: Baked Brie with Caramelized Onions and Bacon, as well as Brie with Blackberry Compote and honey. Each of these flavor combinations will wow you and your guests.
Blackberry Compote and Honey Baked Brie Recipe
A compote is so easy to whip up and adds so much flavor and sophistication to any dish. On top of buttery baked brie, it is to die for. HERE is an in depth how-to on how to make our Blackberry Compote.
First have your compote ready to go and cooled. Then prep you brie properly by removing the rind from the top of the wheel. Next, bake your brie until bubbly, about fifteen minutes. After you get the brie out of the oven, immediately top it with your homemade compote and drizzle it with honey.
Once baked and topped, you will want to dig in immediately. The brie will remain gooey enough to dip into for about fifteen minutes, and then easy to spread for about another fifteen.
Caramelized Onion and Bacon Baked Brie Recipe
Baked brie is so yummy on its own, so adding amazing ingredients on top is just icing on the cake. Caramelized onions are simple to make and are deliciously underrated. They slowly cook until the natural sugars in the onions caramelize and exude a deliciously sweet yet salty flavor. Paired with bacon and buttery brie, you cannot go wrong.
To caramelize your onions, start by heating up a mix of butter and olive oil in a skillet. Once hot, add your onions. They will shrink in volume dramatically, so make sure your start with plenty. For one eight-ounce brie, I would use two onions.

With the onions caramelized, go ahead and prepare your bacon. I used the precooked and just heated it up in the microwave. Again, you are going to start by baking your brie until bubbly. After your brie emerges from the oven you top it with your onions and crumble you bacon on. Serve immediately.
Bake Brie with Blackberry Compote and Honey
Ingredients
- For compote:
- Four cups fresh or thawed frozen blackberries
- 1/2 cup sugar
- Squeeze of fresh lemon juice (optional)
- Pinch salt
- For the slurry
- 2 Tablespoons cornstarch
- 4 Tablespoons water
- Other Ingredients:
- 8 oz wheel of brie
- Honey
Directions
- To make compote: To make slurry, stir cornstarch and water in small bowl, until smooth. Set aside.
- In small saucepan, combine blackberries, sugar, lemon juice, and salt.
- Bring berries to a boil and cook for 2 minutes to allow sugar to dissolve.
- Turn heat to low, give slurry one last stir and add approximately 2/3 of it to hot berries, stirring continuously. Return to boiling and cook for at least one minute, until thickened. Add more of the slurry and continue to cook if more thickening is necessary.
- Prepare your brie wheel to bake by remove the rind from the top of the wheel. Bake for 15-20 minutes until brie is bubbly. Remove from oven.
- Top with compote and drizzle with honey. Serve immediately.
Baked Brie with Caramelized Onion and Bacon
Ingredients
- Two onions
- Two teaspoons of olive oil and
- Two teaspoons of butter
- Pinch of Salt
- Three pieces of bacon
- 8 oz wheel of brie
Directions
- To Caramelize onions: Heat the oil and butter in the pan. When warm add your cut onions. Cook from ten minutes on medium high heat.
- After ten minutes reduce heat to medium heat and add a pinch of salt. Cook until golden brown. Will take anywhere from 30 minutes to an hour. Stir occasionally. You want them to sit long enough to brown, but stir enough to make sure they do not burn. Once the onions are nice and brown, remove from heat.
- Prepare your brie wheel to bake by removing the rind from the top of the wheel. Bake for 15-20 minutes until brie is bubbly. Remove from oven.
- Once brie is out of the oven top with caramelized onions and crumbled bacon. Serve immediately.
